Jom pi dapuq : Baked Potato with Broccoli, Corn kernels and Red Onion

Have always loooove potatoes. Simply sedap and mengenyangkan! Haritu, tiba2 teringat last year at about this time, i was excited to start my internship at Pxxxxsxxxx. Throughout the short 3 months tu, i lost my appetite. Xda rasa nak makan pun. I managed to force myself makan pun sebab i kept reminding myself that my body needs food, i need it for energy, i need it for my brain to work, i NEED to eat. I did'nt want to, but i know that i have to, so i ate. Nasi jarang sekali, kadang2 sandwich, kadang2 buah je, kadang2 pastries, kadang2 air je, kadang2 ice-cream je. Tapi yang agak paling selalu is potato. Potato salad kat salad bar iSetan tu, or baked potatoes kat Wendy's. Potatoes definitely saved my life! Over kan? Haha.

So, jom kita buat baked potatoes! Home baked! What could be better than that! :)

Ingredients:

Potato(es), sorang sebijik la, or dua pun okay pa..
Cooking oil
Salt

Toppings/fillings:

Butter
Salt
Black pepper
Broccoli
Corn kernels
Sliced red onions
Parmesan, or any of your fav cheese.

To the Oven!

1. Clean the potato, rub off dirts from the skin, do not peel them!

2. Turn on the oven, set to 200Âșc. Place the rack in the middle.

3. Use a fork, poke around the potato, so that later while it's baked steam boleh keluar.

4. By using your precious palms and fingers, rub the oil all over the potato skin.

5. Sprinkle salt around the potato, the oil should hold the salt to the potato skin.

6. Place the potato on ovenproof (or is it -prove?) plate, or as for a pemalas nak basuh person me for instance, i letak potato on a baking paper je then place it on the middle rack in the oven.

7. Let it bake for around 50 minutes to an hour. Depends on the size of the potato. Lg besar, lg lama. Macamana nak tau dah okay ka belom? Haaa. Kulit potato patut nampak mcm crispy and bila tekan potato tu mcm lembut.

8. Keluarkan potato tu, slice in the middle, lengthwise, half-through the depth je. Spoon out the potato from the skin, gently, carefully not to tear the skin.

9. Isi potato tu, mashed it with a fork. Add some butter, salt and pepper. Add some boiled corn kernels.

10. Then, masukkan isi potato tu dlm potato skin tadi balik.

11. Top it off with your favourite topping, and baked for another 5 to 10 minutes.

12. Serve hot, or warm.

To the stove! For the topping- i prepared this while the potato is baking in the oven.

1. I boiled the broccoli florets and corn kernels. Just until broccoli tu kita nampak keserlahan kehijauan-nyaaa.. hehe, and the corns tu terang kekuningan dan fluffy. About 3 minutes macam tu. Tapis and rinse with cold water.

2. The sliced red onions tu, i goreng dalam butter until wangi or macam lembut, then i add in some black pepper sauce, just because i love it that wayyy.

3. I letak the black peppered onion slices on the potato filling, tuang kuah tu. Then bubuh a bit more corns on top of that, then letak some broccoli florets.

4. Finally, letak cheese on top of everything. This will melt in the oven.

The extra corns that I had, i made small side dish. Add generous amount of butter to the corns, some salt, some white pepper powder. Serve.
